Proper rustic eats! A simple meat & veg dish but packed full of taste. A real taste of Greece you can prepare and cook at home in no time at all.
Ingredients
- 1lb Diced lamb (I prefer larger chunks for more flavour)
- 4 Potatoes, cut into quarters
- 8 Cloves of Garlic
- 100g Feta Cheese
- 3-4 Sprigs of fresh rosemary
- Olive Oil
- Sea Salt to season
Method
- Lay out a sheet of tinfoil and spread the lamb evenly over it.
- Surround the lamb with the chopped potatoes.
- Place the garlic cloves spaced evenly among the meat.
- Crumble up and sprinkle the feta all over.
- Lay the rosemary on top , drizzle with olive oil and season with the sea salt.
- Wrap up the tinfoil creating a tightly formed parcel & cook in the oven for 35-40 mins (depending on oven) at 200C / 390F / Gas Mark 6
- Remove from oven and leave rest for 5 minutes before opening , plate up and enjoy!
