Greek Style Lamb

Proper rustic eats! A simple meat & veg dish but packed full of taste. A real taste of Greece you can prepare and cook at home in no time at all.

Ingredients

  • 1lb Diced lamb (I prefer larger chunks for more flavour)
  • 4 Potatoes, cut into quarters
  • 8 Cloves of Garlic
  • 100g Feta Cheese
  • 3-4 Sprigs of fresh rosemary
  • Olive Oil
  • Sea Salt to season

Method

  1. Lay out a sheet of tinfoil and spread the lamb evenly over it.
  2. Surround the lamb with the chopped potatoes.
  3. Place the garlic cloves spaced evenly among the meat.
  4. Crumble up and sprinkle the feta all over.
  5. Lay the rosemary on top , drizzle with olive oil and season with the sea salt.
  6. Wrap up the tinfoil creating a tightly formed parcel & cook in the oven for 35-40 mins (depending on oven) at 200C /  390F / Gas Mark 6
  7. Remove from oven and leave rest for 5 minutes before opening , plate up and enjoy!
