Anyone up for a cheeky Nandos?! Spicy Peri Peri chicken is one of my personal favourites so i came up with this recipe for anyone following slimming world to be as close to that flavour as i could get. Tender oven baked, skinless chicken drumsticks in a tasty syn free peri peri marinade.
Ingredients
- 8 skinless chicken drumsticks
For the Peri Peri Seasoning
- 1 ½ tsp paprika
- 1 tsp oregano
- 1 tsp ginger powder
- 1 tsp ground cardamom
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp cayenne pepper
*Makes enough for one serving, but if you want it can be scaled up and made ahead of time for future use.
For the Marinade
- Peri Peri Seasoning (see above)
- 4 tbsp quark
- 1 tsp tomato paste
Method
- Mix the quark and the tomato paste together.
- Mix in the peri peri spices.
- Pour over the drumsticks and toss until they are fully covered in the marinade.
- Leave to marinade in the fridge for at least 20 mins to an hour. The longer you can leave it the more flavour that can develop.
- Preheat the oven to 200°C/180°C Fan/392°F/Gas 6.
- Lay the drumsticks out on a greased cooking tray (or on parchment paper).
- Cook for approx 30-35mins until the chicken is fully cooked through (internal temperature 75°C/165°F and the marinade has developed a nice caramelization.
