Sweet Potato & Chickpea Patties

Chickpea and sweet potato patties , a delicious healthy and tasty meal. I love them served on a bed of salad, with toasted pine nuts, shaved parmesan and a pesto drizzle.

Ingredients

  • 400g Can of chickpeas, drained
  • 1 Onion chopped
  • 200g Mashed sweet potato
  • 2 tsp Chilli powder
  • ¼ tsp Turmeric
  • 1 egg, lightly beaten
  • 1 tsp Ground coriander
  • 2 tsp Cumin
  • 2 tbsp Chopped coriander leaves
  • Salt & pepper
  • Low calorie cooking spray

 

Method

  1. Place the chickpeas and onion in a food processor and blend for approx 2 minutes until roughly mashed. Transfer to a mixing bowl and add the sweet potato, chilli powder, turmeric, egg, ground coriander, cumin and the fresh coriander. Season well with salt & pepper.
  2. Preheat the oven to 200°C/180°C Fan/392°F/Gas 6.
  3. Divide the chickpea mixture into 12 portions and shape each one into a burger patty.
  4. Place the patties on a baking tray lined with greaseproof(parchment) paper.
  5. Spray with low calorie cooking spray and bake for 20-25 minutes or until lightly golden and cooked through.
  6. Serve immediately and enjoy!
