Chickpea and sweet potato patties , a delicious healthy and tasty meal. I love them served on a bed of salad, with toasted pine nuts, shaved parmesan and a pesto drizzle.
Ingredients
- 400g Can of chickpeas, drained
- 1 Onion chopped
- 200g Mashed sweet potato
- 2 tsp Chilli powder
- ¼ tsp Turmeric
- 1 egg, lightly beaten
- 1 tsp Ground coriander
- 2 tsp Cumin
- 2 tbsp Chopped coriander leaves
- Salt & pepper
- Low calorie cooking spray
Method
- Place the chickpeas and onion in a food processor and blend for approx 2 minutes until roughly mashed. Transfer to a mixing bowl and add the sweet potato, chilli powder, turmeric, egg, ground coriander, cumin and the fresh coriander. Season well with salt & pepper.
- Preheat the oven to 200°C/180°C Fan/392°F/Gas 6.
- Divide the chickpea mixture into 12 portions and shape each one into a burger patty.
- Place the patties on a baking tray lined with greaseproof(parchment) paper.
- Spray with low calorie cooking spray and bake for 20-25 minutes or until lightly golden and cooked through.
- Serve immediately and enjoy!
